“Saint-Esprit” as Patrice Ey was cutting the vines during a beautiful winter day, a hawk came over and started a stationary flight to look for its preys.

Saint-Esprit is the name of this unique flight symbolizing the Finesse and Balance to be found in this wine.

VINEYARD & TERROIR: 36 year’s old vineyard called “Lo Clavell” on a slope facing south in a plateau raised during the quaternary era with clay and rocks and pebbles eroded by water and wind.

The vineyard was worked in 2000 under strict sustainable agriculture methods preparing for organic practices.

AREA OF PRODUCTION: ROUSSILLON: Vineyard located on the “Muscat de Rivesaltes AOC”

GRAPE VARIETY: 100% Muscat d’Alexandrie (grape rarely used alone)

WINEMAKING:  Harvest is handpicked and laid in small crates and for the first time in 2000, transported to the winery in a refrigerated truck.

The bunches are left intact for maceration for a few days in a cold room, in order for the juice in the berries to capture a maximum of flavor elements by maceration. The cold temperature (3-4 C) prevents from oxidation.

Then a slow de-stemming is quickly followed by a gentle pressing. The juice is left to settle and the lees separate from the clear juice.

Fermentation happens in a temperature controlled tank over several weeks for all the sugar to be transformed in alcohol.

AGING: Quickly bottled to capture all the freshness and fruitiness, the wine was voluntarily forgotten to allow a slow maturation in the bottle over a 10 years period.

Here is the evolution it followed: showcasing delicate flower and fruits flavors its first 3 years it then closed down for 5 years before starting to develop a much more complex aromatic structure with some nutty characters, variety of dried fruit flavors, cinnamon spices.
